Dick Maisenbacher: Get to know your beans, chickpeas, split peas, and lentils. They are an excellent protein for any meal. So versatile, so cheap, so easy to prepare but you do have to allow yourself time in between steps. OR get canned.Eggs too, a good protein. When you are thinking about what can go in eggs or omelets...think pizza toppings. Anything you can put on a pizza (and that is a LOT) you can put in your omelet.I make a really good dish, gloppy like mac and cheese, it is so dang good. I start with butter in my hot pot...add some barley and stir to coat all the kernels. Add some onion, garlic, and sweat them a little bit...add some broth, some bay leaves, some italian seasoning, salt and pepper. Add a couple carrots, trimmed and cut in quarter inch coins. Bring to boil, reduce heat, lid on for the cooking time of the barley. At the last minute, add a can of drained chickpeas. I also like rice and lentils...start with butter in your hot po! t...add equal amounts of white rice and brown lentils, stir to! coat the pieces. Add onion, garlic...let them sweat. Add some broth, some bay leaves, some italian seasoning, salt and pepper. (is any of this sounding familiar?) Add a couple carrots, trimmed and cut in quarter inch coins...and 4-6 cups of cabbage shreds. Bring to boil, reduce heat, lid on for 25 minutes...garnish with fresh parmesan. If you want to eat this on a meat day...it works great with smoked (horseshoe shaped) sausage, cut in coins added at the last minute to heat it through...but n utritionally it is not needed.By the way. Friend of Chip is ridiculous and did not have to ball-bust you. THUMBS DOWN! I eat meat, too, and I also consider vegetarians and vegans to be an excellent resource when it comes to cooking healthier and with more imagination. So it was a good question to ask and good to let us know where you are coming from....Show more
